S’mores are a summer staple, so for National S’mores Day I thought it would be fun to add a slight twist to this favorite treat—making a s’mores-inspired ice cream treat in a bag. And with only four ingredients, it’s a breeze to make. Each bag serves 1–2 people.
Rather than providing an overwhelming s’mores taste (where you usually can’t eat more than one), this ice cream gives a subtle sweet treat where the graham cracker flavor is infused into the chocolate and topped off with chewy marshmallows. If you want a stronger chocolate flavor, you can throw in a spoonful of mini chocolate chips, but I love it with the lighter chocolate flavor.
Ingredients (serves 1–2)
• 1 graham cracker
• 1/2 c. whole milk
• 2.5 tsp. brownie mix
• 1/4 c. marshmallows
• Rock salt
Here’s how to make the s’mores-inspired ice cream in a bag:
1. Break up one graham cracker into a sandwich bag. Place the bag inside a mug to hold it upright.
2. Add 1/2 cup whole milk, 2.5 tsp. brownie mix, and 1/4 cup marshmallows inside the bag, and then seal the bag. Place the bag inside a second sandwich bag (this helps keep any rock salt from getting inside).
3. Place the sandwich bag inside a gallon bag and add 1/4 cup rock salt to enhance the freezing process. Fill the gallon bag half full with regular ice. Tip: If you’re making multiple servings, you can add a second sandwich bag of ice cream mix into the ice; but if you're making three or more servings, create another gallon-size bag of ice and salt for every 2 servings.
4. Shake the bag for around 10 minutes until the ice cream thickens. You can make it more fun by tossing the bag between family or friends outside, though you’ll want to add another gallon-size bag around the outside if so. Tip: You may want to wear mittens or use oven mitts to keep your hands from getting cold when shaking it!
That’s it! Your s’mores-inspired ice cream will be ready in minutes. Then serve and enjoy it right away for the best taste.
